This is a very simple sauteed Garlic Shrimp recipe that I put together the other night to go along with the Caprese Lasagna Rollups I was baking.
- 1lb medium frozen shell-on easy peel shrimp
- 2 tbsp olive oil
- 6 cloves garlic – diced
- 1 bunch scallions – chopped
Thaw the shrimp in a bowl of cold water, takes about 30 minutes, and peel. Heat the 2 tablespoons of olive oil in a medium skillet over medium-high heat. Add the diced garlic and heat until lightly browned. Add the thawed, peeled shrimp and cook until pink, stirring occasionally. Add the chopped scallions and cook for about 4 minutes, stirring occasionally.
Your Garlic Shrimp is now done and ready to serve. I chose to serve this with my Grilled Asparagus and Caprese Lasagna Rollups the other night. It’s a great dish to pair with other dinner items, or you can serve over rice, pasta or salad and it makes for an easy stand alone dish as well.
How would you serve this dish? I would love to hear your thoughts in a comment below.
